Chicken Divan

A real hit but probably not something you should eat on a regular basis; People love it and it is easy to make. It's sorta rich.

Prepare the following
* 1 pkg. of frozen broccoli (I like using fresh if available.) Cook, drain and set aside. (I also use two pkgs. because I love broccoli.)
* 1 whole chicken, cut in half, cooked in a pot of water for about 45 minutes. Remove meat from bone. OR select chicken breast, thighs and drumsticks to feed about 6 people and cook them in oven for about 30 minutes ahead of time. I like selecting my own pieces. If you use the whole chicken and cook it in water, save the broth for future use. It freezes well.

* 2 cans of cream of mushroom soup
* I cup mayonnaise - not salad dressing
* 1 Tablespoon lemon juice - fresh preferably
* 3/4 cup sharp cheddar cheese grated plus extra for topping
* Couple of dashes of ground red pepper (to taste)
* 1/2 cup dressing/stuffing mix (like Pepperidge Farm)
* Butter - real

Arrange the cooked broccoli on the bottom of a greased 11x13 ish dish. Place chicken on top of that.
Mix all the other ingredients except the dressing and butter. Then pour it over the broccoli and chicken.
Top it all with dressing and slices of butter.
Bake at 350 for 30 minutes. Remember, most everything is already cooked.

NOTES:
Cut broccoli in small pieces to make serving easier.
Goes well with corn bread and rice.
